5 Rules to Smoked BBQ

Down in San Antonio, Texas, many people consider themselves “pit masters” or “barbecue connoisseurs.” There’s no denying that barbecue is a sport in itself. There are hundreds of ways to cook up something delicious. While you may prefer one BBQ restaurant over another, there’s no denying that each place has their own signature flavor – whether if it’s in the quality of their meat, the flavor of the rub, the sauce, etc.

You can choose to grill outback or use a smoker when preparing your ‘que. Here at Bar-B-Cutie Smokehouse, we rely on our high quality twin American Pride smokers, whom we call “Smokey and the Bandit.” If you’re ready to take on the challenge to smoke your meat, we have some helpful tips to make sure you get a good start.

Rule #1: Low and Slow

If you’re from the South, you’ve probably heard this saying too many times to count. It’s repeated so much because it’s true! It’s not a secret, but mastering the right temperate and timing for your meat is essential, so it’s no easy feat.

Don’t expect everything to be ready within an hour or so. It takes time and will test your patience. For example, at Bar-B-Cutie, we smoke our brisket for about 16 hours.

Rule #2: Choose the Right Wood

We said earlier that there are hundreds of ways to barbecue something – and part of the reason is there are so many different types of wood to use to smoke your meat! Some people even choose to mix in 2 different types of wood.

The most popular wood you have probably heard about is mesquite, but don’t disregard the others! We use local post oak, but cherry and hickory are also worth testing for yourself.

Rule #3: Stop Peeking!

Patience. Patience. Patience. The more often you keep opening the door or lid, the longer you will have to wait. Don’t let all the heat escape because it will lower the temperature. Trust the smoker to do its job. 

Rule #4: You Get What You Pay For

You can’t expect a $5 cut to taste like a $20 cut. No matter how good of a cook you might be, the quality of the meat you purchase has a lot to do with the flavor. There’s a reason why you never see a fast-food steakhouse in the South. Would you ever order a ribeye from a fast food spot? Probably not. If you’re hungry for some delicious BBQ, you should expect to pay a little more.

Rule #5: Choose Your Rub Wisely

The rub is a very important part of barbecue – but again, it all comes down to your preference. Some people may prefer a spicy rub over a peppery rub. Figure out what works for you and pairs nicely with the type of wood you use. Some people use different rubs for the different types of meat they use, and it all comes down to pairing.

Don’t expect to master a smoker from your first or oven your tenth attempt. You will find just how different grills and smokers are once you are put to the test. BBQ is its own art form! There are so many varieties, and it’s up to you to find out what you prefer.
